- 1 tablespoon cooking oil, plus more for spraying
- ½ cup chopped white onion
- 1 Roma tomato, chopped
- ⅓ cup chopped green bell pepper
- 2 cups shredded cooked chicken
- 1 teaspoon sea salt
- 1 teaspoon garlic powder
- ¼ cup chopped fresh cilantro
- ½ teaspoon freshly ground black pepper
- 18 (4-inch) corn tortillas, warmed
- 1¼ cups shredded Monterey Jack cheese
Instructions
- Heat the cooking oil in a large skillet over medium heat. Add the onion and cook for 1 minute, until softened. Stir in the tomato and cook for 2 minutes, or until it begins to release its juices. Add the bell pepper and cook for 3 minutes, stirring occasionally.
- Add the shredded chicken and season with the sea salt and garlic powder. Cook for 3 minutes, stirring to combine. Stir in the cilantro and black pepper. Reduce the heat to low and cook for 5 minutes more, allowing the flavors to meld. Remove from the heat and let the filling cool slightly.
- Preheat the oven to 350°F. Line a large baking sheet with aluminum foil or parchment paper.
- Place about 2 tablespoons of the chicken filling and 1 tablespoon of Monterey Jack cheese down the center of each warmed tortilla. Roll tightly and arrange seam-side down on the prepared baking sheet. Lightly spray the taquitos with cooking oil.
- Bake for 25 minutes, or until the tortillas are crisp and golden brown.
- Serve warm with guacamole, salsa, or your favorite dipping sauce.
