Highlighting Real California Dairy
What makes this Queso Fundido extra special is the use of Real California Oaxaca-style cheese. Known for its mild, slightly buttery flavor and creamy texture, this cheese melts beautifully, creating the perfect foundation for queso-based dishes. Sourced from California dairy farms, Real California cheese comes from high-quality milk and sustainable practices, ensuring fresh, delicious products that honor both tradition and the environment.
Adding a layer of tangy creaminess, Real California Crema con Sal enhances the flavor profile with its rich, smooth texture. This versatile crema can top off any dish, from tacos to salads, bringing a signature taste that’s the perfect balance to the savory, melty cheese.
Storage Tips
- If you have any leftovers (though it’s rare with such a crowd-pleaser!), store the potatoes and chorizo mixture separately from the cheese in airtight containers in the refrigerator for up to three days. When it’s time to reheat, place it in an oven-safe dish and warm it in the oven at 350°F until bubbly. This method helps the cheese retain its creamy texture, avoiding the rubbery consistency that can happen with microwave reheating.
A Brief History of Queso Fundido
- The name fundido means “melted” in Spanish, which is fitting given the dish’s signature molten texture. Traditionally served in a skillet and enjoyed as a communal dip, Queso Fundido originated in Northern Mexico, where it’s often prepared with chorizo and shared among family and friends. Today, it’s beloved worldwide for its simplicity, inviting flavors, and undeniable crowd-pleasing appeal.
Serving Suggestions
For the ultimate Queso Fundido experience, serve it with warm flour tortillas to scoop up the gooey, cheesy mixture. Topping each serving with a dollop of Real California Crema con Sal, sliced jalapeños, and diced tomatoes adds a fresh contrast to the richness. For those who prefer sharing, you can serve it as a dip with tortilla chips—perfect for parties and gatherings.
Creative Variations
While the classic pairing of potatoes and chorizo is hard to beat, there are plenty of ways to give Queso Fundido your own twist:
- Sweet Potatoes: Swap out yellow potatoes for sweet potatoes for a slightly sweet and nutty flavor that complements spicy chorizo.
- Vegetables Galore: Add bell peppers, cactus, pico de gallo, spinach, or mushrooms for an extra nutritional boost and a pop of color.
- Vegetarian Twist: Substitute traditional chorizo with a plant-based version. Real California cheese still provides that melt-in-your-mouth texture, keeping the dish every bit as delicious.
- Corn Tortillas: Use corn tortillas instead of flour ones for a gluten-free, authentic Mexican twist.
