Zesty Street Tofu Tacos topped with your favorites
My family and I are huge fans of tofu. We’ve been enjoying it for many years and I try to incorporate it into our meals any way I can. I’ve always liked to just chop it up and add it to my soups or salads as is. Sometimes I coat it with corn starch and lightly fry it to give it a little crispy bite to add to my rice bowls. It also makes a great breakfast scramble when cutting back on eggs or when you want to add something different to your breakfast routine. Scrambled tofu breakfast burritos are great!
Now, I’m trying something new. I’ve never made tofu tacos. My mission was to make the most delicious tofu tacos, so delicious that their flavor would surpass any other taco we’ve ever eaten. I think I did it and it was so simple!
With just a few ingredients for seasoning and your favorite taco toppings, I created these amazing baked tofu tacos. The flavor is zesty with just a bit of spice. Think of it as a meatless version of chorizo or seasoned ground beef. Plus, a little goes a long way. I am able to feed my family with two Mori-Nu Silken Tofu packages. It is so versatile, that if there are any leftovers, I can mix it with potatoes, fill burritos, empanadas and top tostadas with it.

Description
Zesty tofu street tacos with just a bit of spice. Think of it as a meatless version of chorizo or seasoned ground beef. Perfect with your favorite taco toppings.
Ingredients
2 packages Mori-Nu Silken Tofu Firm
¼ cup Soy sauce
3 tablespoons Olive oil
2 teaspoons Garlic powder
2 teaspoons paprika
1 teaspoon chipotle powder
3 tablespoons Nutritional yeast
12 street taco size corn tortillas (or 6 regular size corn tortillas), warmed
Taco toppings
sliced radishes
coleslaw mix
sliced serrano peppers
cilantro leaves
chopped tomato
lime juice
Instructions
Preheat oven to 400° F.
Remove the tofu from packaging and drain liquid. Press in between paper towels to remove excess water as much as possible. Set aside.
Combine soy sauce, olive oil, garlic powder, paprika, chipotle powder and nutritional yeast in a bowl and whisk together until a runny paste forms. Crumble tofu into bowl and stir to cover evenly with paste.
Arrange tofu mixture on a baking sheet as a single layer. Bake for 30 minutes or until tofu crumbles begin to crisp.
Divide tofu mix between tortillas. Garnish with radishes, coleslaw mix, serrano, cilantro, tomato and a sprinkle of lime juice. Enjoy.
