A sweet and tart sip of this blueberry lemonade is all you need on a warm day.

This week, we dusted off our little outdoor pizza oven. We made mushroom and margherita pizzas with blistery crispy crusts and gooey mozzarella cheese. Because it was such a warm day, I decided to make blueberry lemonade to wash our pizzas down. It was a perfect Sunday evening with the family.

This blueberry lemonade can be made two ways. You can make a blueberry syrup and add it to a pitcher filled with lemon juice and water (recipe below). Or you can combine everything in a blender and avoid making the syrup. It’s delicious both ways. You can also run the mixtures through a fine sieve if you don’t want pieces of blueberries floating around. I left everything in. The more blueberries, the better!

This weekend will be a warm one as well and we are also celebrating mother’s day. We are hunkered down at home and we will make the best of it. Description

A sweet and tart sip of this blueberry lemonade is all you need on a warm summer day.


Ingredients

Scale

7 cups water, divided

1 cup blueberries (save a few for garnish)

1 cup granulated sugar

1 cup lemon juice (about 5 lemons), save a few slices for garnish


Instructions

Combine 1 cup water, blueberries and sugar in a small saucepan over low medium heat.  Bring to a boil and continue boiling for 5 minutes stirring constantly.  Remove from heat and let cool.

Combine remaining water and lemon juice in a large pitcher.  Add blueberry syrup to pitcher and stir.  Refrigerate for an hour before serving.  Serve over ice.


Notes

You can run syrup through a fine sieve if desired.
