I have a confession to make. I purchased an Instant Pot for the sole reason to make frijoles de la olla. I’m not ashamed to admit it because it was the best decision I ever made!!

Frijoles de la olla are a staple in our home. On those rare days we are completely out of them, I used to scramble to make them and have the ready in time for the next meal. Not with my Instant Pot!

I don’t have to worry about stove burners being taken up by a big pot while I develop recipes. I just set my Instant Pot and forget about those tender pinto beans cooking as I work or run errands.

If I’m in a hurry, the beans will be ready in just about an hour. From preheating to pressure released and in my bowl. The best investment I ever made.

I like to top my cooked beans with lots of spice. I either have a salsa as an accompaniment or a fresh pico de gallo. Because there is nothing better than fresh cooked beans right out of the pot. One of the best comfort foods one could ever enjoy.

Frijoles de la Instant Pot

Ingredients

Scale

4 cups dry pinto beans, debris removed and rinsed

1/2 white onion

4 garlic cloves

23 teaspoons salt


Instructions

Set Instant Pot to pressure cook on high.

Place beans, onion, garlic and salt in 6 quart Instant Pot. Fill with water to the 1/2 mark.

Place lid on Instant Pot and close valve to “seal”

Cook for 40 minutes.  Allow to naturally release pressure for 25 minutes before doing a quick release.

Using a slotted spoon, remove garlic cloves and pieces of onion.  Serve with pico de gallo.


Notes

Cooked beans can be stored in a freezer safe container up to 6 months.
