The World Cup is right around the corner and my husband and son are super excited to cheer all the teams. I remember when I was younger and I would travel to Mexico for the summer, my cousins would get so excited over the World Cup every four years.
They were totally obsessed with all the teams, the rankings and getting the latest jersey to watch the games in. In fact, I recall a few of them calling into work just to watch the games. It was the one time my entire family could agree on something. An hour before the game, we would stop by our local loncheria and grab some tortas de carnitas, adobada or just an avocado and cheese torta would do! But always paired with an iced cold Coca-Cola®.

This year though, there won’t be enjoying tortas de carnitas because jackfruit has been everywhere lately. I wanted to create my very own jackfruit recipe and this was the perfect opportunity.I think Jackfruit Sliders with a sweet and spicy chipotle BBQ sauce was the perfect game time treat to watch Mexico’s games instead. We’re still obsessed with making game time a family affair and these fabulous little BBQ bites will be perfect paired with Coca-Cola, and Coca-Cola® Zero Sugar for me!
So this summer, add these little tiny vegetarian bites to your menu and share with your loved ones while you watch the games too! And while you’re at it, be a champion and a teammate and don’t forget to share a Coke with your family and friends too, because summer isn’t summer without the people that make the season memorable.
Ingredients
- 2 tablespoons olive oil
- 3 cloves minced garlic
- 1 small red onion chopped, about 1 cup
- ¼ cup honey
- 1 cup ketchup
- 1 can regular Coca-Cola®
- ¼ cup apple cider vinegar
- 1 canned chipotle chile + 3 tablespoons adobo sauce
- 1 teaspoon dry thyme
- 1 teaspoon black pepper
- 2 tablespoon soy sauce
- 1 teaspoon paprika
- 2 cans jackfruit in water (14 oz. each), drained
- 12 slider buns
- 2 cups shredded red cabbage
- pickles (optional)
Instructions
- Heat olive oil over medium heat. Add onions and garlic and stir until softened; about 2 minutes. Add remaining ingredients, cover, and simmer for one hour until the sauce thickens. Stir often. Remove from heat and set aside.
- In a separate medium pan, heat jackfruit over medium heat for 5 minutes. Stir in barbeque sauce and mix into jackfruit until evenly incorporated. Remove from heat and set aside.
- Toast slider buns and scoop in jackfruit mixture. Top with red cabbage and pickles if desired.
