I’ve been wanting to prepare potato croquettes for quite some time. With a Hidden Valley® Simply Dinners™ Breading Prep Kits I was able to prepare them without the fuss. The seasoned bread crumbs are so delicious that even my son loved the convenience of these little tasty bites. I made a batch just for him without jalapeño for snack time. Ingredients
- 2 1/4 cups mashed potatoes
- 1 cup shredded jack and cheddar cheese
- 1 large jalapeño, finely chopped
- 1 egg, beaten
- 1 Hidden Valley® Simply Dinners™ Breading Prep Kit
- 1 package Hidden Valley® Original Ranch® Dips Mix
- 16 ounces sour cream
- 1 cup your favorite salsa
Instructions
- Preheat oven to 450° F. Line a large baking sheet with parchment paper. Set aside.
- Place two tablespoons of mashed potatoes on the palm of your hand. Press to flatten a bit and add 1 teaspoon cheese and a few pieces of jalapeño, top with third tablespoon mashed potatoes and roll into a ball. Repeat with remaining ingredients.
- On a working surface, place beaten egg on one Hidden Valley® Simply Dinners™ Breading Prep Kit tray and the breading mix on the second tray. Dip each potato ball in egg to cover evenly, transfer to breading mix and coat evenly. Place on parchment-paper-lined sheet. Repeat with remaining potato balls.
- Bake for 35 minutes or until golden brown. Serve with dipping sauce.
- Stir together all ingredients in a medium bowl. Refrigerate until ready to serve.
