The best lunch box treat in the galaxy: Chewie Lunch Box Cookies
It’s May 4! That means it’s May the Fourth Be With You. Also known as Star Wars Day! This year, we are celebrating big! The Force Awakens outdoor movie theatre will be showing at my son’s school, light sabers allowed, a Chewbacca onesie is ready to be worn and these ‘Chewie’ lunch box cookies right here will be ready to be devoured during lunch break.

These Chewie lunchbox cookies are one of my favorite treats to prepare ahead of time. The are the best at traveling across the galaxy. In our case, across town. They are a power-packed treat because they include oats, raisins, coconut and honey. I added chocolate as bonus and to give it that dessert factor the kiddo craves right after a meal. You can always substitute or add your favorite dried fruit, seeds and nuts to vary in flavor and texture. The truth is, these are great as a snack and a better alternative than candy and extra sweet desserts. We don’t need that.
Baking time is minimal and prep is at light speed. No fuss.
Celebrate Star Wars Day with these tasty treats. If you make too many, they can be easily stored in a sealed plastic bag or a tightly sealed container.

Ingredients
- 2 1/2 cups old-fashioned oats
- 1/2 cups raisins
- 1/2 cup all-purpose flour
- 1/2 cup sweetened shredded coconut
- 1/3 cup semi-sweet chocolate chips
- 1/2 cup (1 stick) butter, melted and cooled
- 1/4 cup honey
- 1 large egg
- 1 tablespoon low fat milk
Instructions
- Preheat oven to 350° F
- Line 2 large baking sheets with parchment paper, spray with nonstick cooking spray.
- Combine oats, raisins, flour, coconut, and chocolate chips in a large bowl. Lightly whisk together butter, honey, egg and milk in a medium bowl. Add butter mixture to oat mixture; stir to combine. Cover, refrigerate for 10 minutes.
- Scoop 2 tablespoons of batter into your hand. Roll and lightly press to flatten. Place on prepared baking sheet. Repeat with remaining batter.
- Bake for 12-15 minutes. Cool completely on wire rack before serving or packing.
