Marinated Panela Cheese

Indulge in the exquisite flavors of marinated panela cheese. This versatile cheese with its mild and creamy taste, is transformed into a delightful appetizer when marinated in a blend of aromatic herbs and spices.

Ingredients

1 small bunch flat-leaf parsley, chopped

1 small bunch fresh cilantro, chopped

3 green onions, sliced

3 garlic cloves, finely chopped

1 teaspoon red pepper flakes

½ teaspoon salt

½ teaspoon black pepper

1 cup olive oil

1 (10 ounce) panela cheese, cut in small cubes

Crackers, tostadas or crostini for serving

Instructions

Combine parsley, cilantro, green onions, garlic, red pepper flakes, salt and pepper in a medium heat-proof bowl. Set aside.

Heat oil in a small saucepan for 5 minute or until oil begins to bubble. Carefully pour hot oil in bowl with spices. Stir to mix well.

Place cheese cubes in a large glass container. Pour in oil and herb mixture and stir to coat.

Serve with crackers, tostadas or crostini.
