Crispy Yogurt Bites

These snack-sized delights are packed with nutrients that will satisfy your cravings while keeping you nourished.

Ingredients

¾ cup Real California Plain Yogurt

½ cup smooth peanut butter

2 tablespoons honey

1 teaspoon vanilla extract

1 banana, chopped 

4 cups corn flakes cereal

¾ cup melting chocolate

1 tablespoon coconut oil

¼ teaspoon sea salt

Instructions

Line a 8”x8” freezer safe container with parchment paper. Set aside.

 

Combine yogurt, peanut butter, honey, vanilla and banana in a large bowl. 

 

Place cereal in a zip bag and crush into small pieces. Add to bowl and gently stir to combine ingredients. Transfer to parchment paper-lined container and gently press down to ½-inch thick layer. If mixture is overmixed, simply sprinkle a ¼ cup crushed cereal over the top and gently press with the palm of your hand. Transfer to the freezer to set for 30 minutes.

 

While mixture sets, make chocolate topping: Combine chocolate and coconut oil in a medium microwave safe bowl. Heat in 15 second increments, stirring in between, until chocolate is smooth.

 

Drizzle over firm yogurt mix and sprinkle with sea salt. Return to freezer and let set for 20 minutes. Transfer set mixture to a cutting board, cut into small squares and enjoy immediately.

 

Notes

If you have leftovers, place in a freezer safe zip bag or container and store in the freezer.
