Description
This wild rice salad screams fall harvest. It’s the perfect light, but hearty lunch or a great side dish for feasts such as Thanksgiving.
Ingredients
Ingredients for Dressing:
1/3 cup apple cider vinegar
¼ cup lime juice
¼ cup olive oil
Salt and pepper to taste
Ingredients for salad
3 cups cooked wild rice
1 red bell pepper, chopped
2 celery stalks, chopped
1 large green apple, chopped
3 green onions, chopped
½ cup prunes, chopped
1/3 cup almonds chopped
¼ cup fresh flat-leaf parsley, chopped
Instructions
Whisk together apple cider vinegar, lime juice, olive oil, salt and pepper in a medium bowl. Set aside.
Combine wild rice, bell pepper, celery, apple, green onions, prunes, almonds and parsley in a large salad bowl. Add dressing. Toss to mix well. Serve.
