Bolitas de Platano – Battered Bananas

Every time I have bananas on my shopping list, I purposely purchase extra to make this family favorite. Enjoy them as a breakfast treat, just as you would French toast or pancakes or serve them up as a mid-day snack. Perfect for the lunchbox too!
Think of these little pastries as churro bites but with a sweet banana center. The process is effortless and quick. Made with pancake flour mix and a few other staple ingredients in your refrigerator, these battered bananas are fried and covered with cinnamon sugar. Imperial Sugar Extra Fine Granulated Sugar, of course.
