Hasselback Potato Bugs

Hasselback Potato Bugs

Creepy-looking baked hasselback potatoes made to look like bugs are the perfect Halloween healthy snack.  Serve them with veggies for a fun party display.

Ingredients

Scale

6 Russet potatoes, rinsed and scrubbed

1 large carrot, peeled and sliced in 2 1/2-inch long sticks by 1/4 – 1/8 inch thick

1/2 cup salted butter, softened

browning seasoning sauce (such as Kitchen Bouquet)

carrot peels for serving

mini bell peppers for serving

basil leaves for serving

Instructions

Preheat oven to 425° F. Line a baking tray with aluminum foil.

Place a potato between 2 chopsticks. Slice the potato into thin slices, leaving 1/2 inch at the bottom unsliced; the chopsticks will prevent you from slicing the potato all the way through. Repeat with the remaining potatoes.

Wedge 2-3 carrot sticks in between layers of each potato, resembling legs. Using the pointy end of a chopstick, pierce two holes on the end of the potato and insert a carrot stick in each hole, resembling antennae. Arrange on baking tray.

Brush1 tablespoon  butter on each potato, covering as much as possible. Place in oven and bake for 8 minutes.  Remove from oven and brush with soy sauce and browning seasoning liquid and return to oven for 8 minutes.  Repeat brushing  three more times brushing with browning seasoning liquid until potato is fully baked and dark brown in color.

Serve with chopped vegetables and carrot peels.
