Lunitas de Fresa

Mini empanadas filled with strawberry preserves.  These Lunitas de Fresa are quick and easy to make.

Ingredients

1 cup Land O Lakes® Unsalted Butter, room temperature

1 (8-ounce) package cream cheese, room temperature

3 cups all-purpose flour

¾ cup strawberry preserves

2 tablespoons confectioner’s sugar

 

 

Instructions

Preheat oven to 350° F.

Combine butter, cream cheese and flour in a large bowl.  Mix with hands for 10 minutes until a smooth dough forms.

Line 2 baking sheets with parchment paper. Scoop out 1 tablespoon of dough, roll with hands and place on baking sheet 1 ½ inches apart. Repeat until all dough has been rolled. 

Using the bottom of a glass, press down each dough ball to make ¼-inch discs. Press down with fingers if disc is too thick. Place a small amount (about 1 teaspoon) of strawberry preserves in the center of each disc. Fold disc in half, resembling a taco, and press down edges with fork to seal as much as possible. Bake for 30 minutes or until bottoms of lunitas are golden brown.  

Immediately sprinkle lunitas with confectioner’s sugar.  Let cool and enjoy.
