Mini Empanaditas filled with strawberry preserves: Lunitas de Fresa
I love making lunitas de fresa when I am craving something sweet. “Lunitas de fresa,” meaning “strawberry little moons,” are small, delicate mini empanadas filled with strawberry preserves. Resembling mini half-moons, these treats are easy to bake and so delicious to enjoy after a meal. They are small enough to serve as a sweet appetizer or pack in a lunch box. Whether for a fancy affair or a casual lunch, these lunitas de fresa are perfect.
The crust for these little pastries only calls for three ingredients. That’s it. Just three. The result is a flaky crust slightly sweetened by the strawberry filling and a sprinkle of confectioner’s sugar. The flakiness comes from creamy Land O Lakes® Unsalted Butter. If you don’t consider yourself a baker, no worries. This recipe is fail-proof and ready in under 40 minutes.

Because these lunitas are so small, you can make a large batch to package as gifts, serve at a potluck or picnic or simply store them in a tightly sealed container and refrigerate to enjoy throughout the week. You will love how easy this pastry treat is to make!

Description
Mini empanadas filled with strawberry preserves. These Lunitas de Fresa are quick and easy to make.
Ingredients
1 cup Land O Lakes® Unsalted Butter, room temperature
1 (8-ounce) package cream cheese, room temperature
3 cups all-purpose flour
¾ cup strawberry preserves
2 tablespoons confectioner’s sugar
Instructions
Preheat oven to 350° F.
Combine butter, cream cheese and flour in a large bowl. Mix with hands for 10 minutes until a smooth dough forms.
Line 2 baking sheets with parchment paper. Scoop out 1 tablespoon of dough, roll with hands and place on baking sheet 1 ½ inches apart. Repeat until all dough has been rolled.
Using the bottom of a glass, press down each dough ball to make ¼-inch discs. Press down with fingers if disc is too thick. Place a small amount (about 1 teaspoon) of strawberry preserves in the center of each disc. Fold disc in half, resembling a taco, and press down edges with fork to seal as much as possible. Bake for 30 minutes or until bottoms of lunitas are golden brown.
Immediately sprinkle lunitas with confectioner’s sugar. Let cool and enjoy.
