Keep Cool this Summer with Lime Sorbet Garrafa Style

Sorbet, or as I call it “nieve de garrafa” is one of my favorites summertime treats. It is usually sold in Mexican mercados, busy streets and outside crowded buildings like churches and schools.

“Garrafa” referring to the metal container, this frozen dessert is made in, the sweet fresh fruit liquid is poured in this container, the metal container or garrafa is then placed in a larger wooden barrel filled with salted ice. As the liquid begins to freeze , the ice cream maker scrapes the frozen liquid continuously until a fluffy, airy-like consistency. It’s a beautiful craft all over Mexico.

I made my own garrafa-style ice cream at home and I used Imperial Sugar Extra Fine Granulated Sugar to sweeten this nostalgic favorite of mine. I used a smaller loaf bread metal mold and scraped with a fork until the ice became fluffy.

Nieve de garrafa is customarily made with fresh, natural ingredients. Nothing artificial. Some may include cream or milk and some fresh fruit. If you get an opportunity to visit any town in Mexico. Look for nieve de garrafa stands or vendors. It’s guaranteed to delight you and create memories of your favorite treats in Mexico.
