Sopa Mexicanas and Spinach and Black Bean Quesadillas

Being at home this past year, I found myself constantly cooking meals, one right after the other. After we have breakfast, I immediately have to start preparing lunch to have it ready in time for my son’s lunch break. It’s a constant cycle I’ve been dealing with on a weekly basis. This cuts into my work time, it’s stressful and delays my work. Meal prepping on the weekends is a great way to organize myself but sometimes I don’t have the time or the energy after so much cooking I do for work and home throughout the week.
I found an easy and tasty solution to alleviate some of my time during the week. Knorr® Sopa Mexicana Soup Mixes are great when I am stumped on what to make for lunch or dinner. Pair it with a quick side dish, such as these spinach and black bean quesadillas and we have a full meal that is flavorful, satisfying and so delicious. They’re just like the sopitas my mom used to make for us many years ago.
Knorr® has a great variety of soups. Now, they have released three new Sopa Mexicana flavors: Minestrone, Mestiza and Chicken and Rice Flavor. For our quesadillas this week, we enjoyed the minestrone soup with little pasta shells and pieces of carrot, leeks, sweet corn, spinach and garlic. I love that these have no artificial flavors or ingredients. It not only cuts down on cook time (it’s ready in less than 10 minutes!), it also helps me cut down on my groceries, because it has everything in one package and there’s no food waste afterwards. These sopitas can also be paired with your favorite salad, tacos or enjoyed on their own for a quick light lunch.

Ingredients
4 large flour tortillas
2 cups Monterey jack cheese, shredded, divided
2 cups spinach, chopped, divided
1 1/3 cup cooked black beans, drained, divided
Instructions
Heat a comal or skillet over medium heat. Place 1/4 cup cheese, ½ cup spinach, 1/3 cup beans and another ¼ cup cheese on one side of tortilla. Fold over tortilla and heat on skillet for 1 minute or until bottom cheese layer melts. Flip quesadilla to other side until the top layer of cheese melts. Slice in half and repeat with remaining ingredients. Serve with Knorr® Sopa Minestrone flavor.
