Chipotle Beer Cheese Dip: The perfect appetizer for your game day menu.

Are you ready for the big game this weekend? We are prepping our homegating menu with the help of ALDI supermarkets.  Because we are staying safe at home during this time, I decided to use my Instacart shopping app to order everything I need and have it delivered to my front door. This will make game day a special one for me and my family. As a mom, I wear multiple hats day to day. This recipe of chipotle beer cheese is very simple to make.  I used Pueblo Lindo Chipotle Peppers in adobo to give this dip a special spicy/smokey flavor.  Pueblo Lindo Chipotle Peppers are available at ALDI for $1.09.  At another store in my area, I would have paid $2.59.  I saved $1.50! 

I served the dip with toasted French bread along with some cut up carrot and celery sticks.  Fresh produce arrives to ALDI stores daily.  At ALDI they care so much about the freshness of the veggies and fruits that they offer, that they work with farmers and local growers to ensure the vegetables arrive from the field to the store in the shortest possible time…in some cases, even within a couple of days!

As part of my football spread, I served Simply Nature Organic White Cheddar Puffs.  I purchased a bag at ALDI for $2.15.  At other stores, I would have paid $4.29.  I saved $2.14!  ALDI has plenty of game day essentials that are ready to serve if you’re running low on time like frozen pizzas, stuffed mushrooms, dips and salsas! Chipotle Beer Cheese Dip

Description

A fluffy, savory and spicy cheese dip that will the star of your appetizer table during the game.


Ingredients

Scale

1/3 cup light beer

4 ounces cream cheese, cubed

1 chipotle in adobo

½ cup crumbled bleu cheese

¼ cup Dijon mustard

2 tablespoons grated onion

1 large garlic clove, chopped

3 cups cheddar cheese, grated

Fresh or dried chives for garnish


Instructions

Place beer in a small saucepan over medium heat.  Bring to a boil for 30 seconds.  Remove from heat and set aside to cool. 

 

Place cream cheese, chipotle, bleu cheese, mustard, onion and garlic in a food processor.  Process until smooth.  Add cheddar cheese and process again until smooth and all ingredients are combined well. Transfer to a serving plate.  Sprinkle with chives and serve with toasted bread, crackers, carrot and celery sticks.
