Give your egg salad a spicy and tangy twist with roasted green chiles and McCormick® Mayonesa with Lime Juice
After so much baking these last few months, we needed to refocus our cooking to something fresh, filling, flavorful and … fun!
The heatwave this week directed us to to this delicious egg salad made with roasted Anaheim peppers, celery and green onions. We ate it by the spoonful and sandwiched between slider buns to enjoy while we cheered on our baseball team on television.
What I love most about this salad is that the key ingredient is McCormick® Mayonesa with Lime Juice. It gives the dressing a tangy twist because it is made with lime juice. Isn’t that mouthwatering? The flavor profile is so savory, it is the perfect ingredient to liven up your favorite dishes.
I grew up with McCormick® Mayonesa with Lime in Mexico, and I was so happy to find out that the product is imported from Mexico and still uses the same formula. It is also the market leader on flavored Mayonesa. It’s a product I hold near and dear. It brings back so many memories of homemade sandwiches we enjoyed at the soccer game, my mom’s potato salad, creamy chipotle dressings and now I can add this egg salad with green chiles to that list of favorites.
McCormick® Mayonesa with Lime Juice is available at Kroger retailers. I was able to find mine at Food 4 Less along with the all the ingredients this recipe calls for.
If you prefer added heat to your salad, add some chopped jalapeños or serrano peppers. The spicy flavor pairs perfectly with the creaminess of the chopped egg yolks and tanginess of McCormick® Mayonesa with Lime Juice

Give your egg salad a spicy and tangy twist with roasted green chiles and McCormick® Mayonesa with Lime Juice
Ingredients
8 hard boiled eggs, chopped
4 Anaheim peppers, roasted, peeled and chopped
2 green onions, chopped
2 celery stalks, chopped
1/2 cup McCormick® Mayonesa with Lime Juice
2 tablespoon yellow mustard
1/2 teaspoon paprika
1 teaspoon sea salt
1/4 teaspoon ground black pepper
Romaine lettuce, sliced in small pieces
18 slider buns
Jalapeño slices
Instructions
Combine eggs, Anaheim peppers, green onions and celery in a large bowl.
Whisk together mayonnaise, mustard and paprika in a small bowl. Fold into egg mixture with spatula until well mixed. Season with salt and pepper.
Place lettuce on bottom half of slider bun, top with egg salad and cover with top half of slider bun. Pierce a jalapeno slice through the top of slider with a sandwich pick. Repeat with remaining ingredients. Serve and enjoy.
