Description
This easy 2-cheese dip prep is one of the quickest way to get your night-in party started. Loaded with tomatoes, Anaheim peppers, jalapeños and fresh cilantro. Dip with tortilla chips or potato wedges.
Ingredients
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
2 Roma tomatoes, chopped and divided
3 Anaheim peppers, roasted peeled and chopped
3 cups cheddar cheese, shredded
2 cups Monterey jack cheese, shredded
1 jalapeño sliced
1/2 cup fresh cilantro, chopped
Instructions
Melt butter in a large cast iron skillet over medium low heat. Add flour and whisk until smooth. Slowly whisk in milk in a slow stream. Stir in 1 chopped Roma tomato and Aanaheim peppers. Add cheeses one cup at a time, stirring frequently. Decrease heat to low and continue cooking until cheese has melted and mixture is smooth. Top with remaining tomato, jalapeño slices and cilantro. Serve with tortilla chips and potato wedges.
