I’ve been baking quite a lot lately. My family has gotten used to having a different cake and bread every couple of weeks to enjoy as a breakfast treat or as a mid-afternoon coffee accompaniment. I’m always experimenting with different flavors to add to my frequent dessert-making and this week I definitely hit the jackpot.
I had been wanting to make a Salvadoran quesadilla lately but had a difficult time finding rice flour. I ended up creating something similar and just as delicious with all-purpose flour and one of my favorites, Land O Lakes® Butter with Canola Oil : Queso Fresco Pound Cake.

Description
A rich and buttery bread with the right touch of sweet. Perfect to enjoy as a breakfast or brunch treat with a dark cup of coffee of tall glass of milk.
Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1 cup granulated sugar
2 large eggs, beaten
¼ cup whole milk
¼ cup heavy whipping cream
1 cup crumbled queso fresco
½ cup Land O Lakes ® Butter with Canola Oil, melted and cooled
1 tablespoon sesame seeds
Instructions
Preheat oven to 325° F.
Sift flour and baking powder together in a medium bowl. Set aside.
Combine sugar and eggs in a medium mixing bowl; mix with electric mixer for 2 minutes. Add milk, cream and queso fresco; beat for 1 minute. Add Land O Lakes® Butter with Canola Oil and continue mixing until ingredients are completely combined.
Stir in dry ingredients until a batter forms. Transfer mixture to a greased loaf pan. Sprinkle with sesame seeds. Bake for 50 minutes or until a toothpick comes out clean. Serve warm.
