Queso Fresco Pound Cake. Rich, buttery and delicious

I’ve been baking quite a lot lately. My family has gotten used to having a different cake and bread every couple of weeks to enjoy as a breakfast treat or as a mid-afternoon coffee accompaniment. I’m always experimenting with different flavors to add to my frequent dessert-making and this week I definitely hit the jackpot.

I had been wanting to make a Salvadoran quesadilla lately but had a difficult time finding rice flour. I ended up creating something similar and just as delicious with all-purpose flour and one of my favorites, Land O Lakes® Butter with Canola Oil : Queso Fresco Pound Cake.

Land O Lakes® Butter with Canola Oil gives this delightful sweet treat a rich, buttery taste. Add creamy queso fresco and you’ve got yourself a winning combination of flavors and a dessert your family will request over and over again. Just like mine.

The queso fresco in this bread can be easily substituted with crumbled cotija cheese or Parmesan cheese. Any dry cheese will work. If you’re out of heavy whipping cream, try sour cream, crème fraiche or Salvadoran cream. This bread is versatile and will work with the ingredients you have at hand. Description

A rich and buttery bread with the right touch of sweet.  Perfect to enjoy as a breakfast or brunch treat with a dark cup of coffee of tall glass of milk.


Ingredients

Scale

1 cup all-purpose flour

1 teaspoon baking powder

1 cup granulated sugar

2 large eggs, beaten

¼ cup whole milk

¼ cup heavy whipping cream

1 cup crumbled queso fresco

½ cup Land O Lakes ® Butter with Canola Oil, melted and cooled
1 tablespoon sesame seeds


Instructions

Preheat oven to 325° F.

 

Sift flour and baking powder together in a medium bowl. Set aside.

 

Combine sugar and eggs in a medium mixing bowl; mix with electric mixer for 2 minutes. Add milk, cream and queso fresco; beat for 1 minute. Add Land O Lakes® Butter with Canola Oil and continue mixing until ingredients are completely combined.

 

Stir in dry ingredients until a batter forms. Transfer mixture to a greased loaf pan. Sprinkle with sesame seeds. Bake for 50 minutes or until a toothpick comes out clean. Serve warm.
