Caprese Style Roasted Asparagus
This week, I haven’t been cooking much lately because I’ve been behind a desk in my office working on the new cookbooks. I ran out of leftovers and didn’t do a great job in meal planning this week. So I headed out to the grocery and reached for the first green vegetable I saw. Asparagus! Ding! Ding! Ding!
I contemplated making spicy asparagus soup but I wanted to get back to my office as soon as possible. No time for soup! I needed something quick, flavorful and easy. Roasted asparagus caprese style. Bingo!
Ready in less than 20 minutes. From prepped to plated. The oven did all the work for me. I picture this asparagus dish paired with pasta, rice or your favorite protein. And I’m not ashamed to say i: I enjoyed them right off the platter. They were that good!
It’s colorful, full of flavor, quick and easy. Everything I was looking for in a meal today.

Description
The most flavor in 25 minutes or less. Make this incredibly easy side dish for a picnic or a side to pasta, rice or protein.
Ingredients
1.5 pounds asparagus
1 pound grape tomatoes, halved
3 tablespoons olive oil
salt to taste
fresh cracked pepper to taste
1 cup mozzarella, crumbled or shredded
1/4 cup balsamic vinegar or to taste
1/2 cup fresh basil, chopped
Instructions
Preheat oven to 400° F. Arrange asparagus and grape tomatoes on a large non-stick baking sheet. Drizzle with olive oil, season with salt and pepper and toss using tongs. Roast in oven for 7 minutes, remove from oven and top asparagus with mozzarella. Return to oven and continue roasting for 5 minutes more or until cheese melts. Transfer asparagus with cheese to a serving platter. Top with roasted grape tomatoes and fresh basil. Drizzle with balsamic vinegar. Serve immediately.
