A tangy, spicy, refreshing and delicious ceviche: Jicama Ceviche
If you are eating ceviche, you are celebrating something. To me, it signifies a good time. Whether you’re on a beach chair watching the back and forth of ocean waves or sitting out on a patio ready to sing the happy birthday song to a loved one, ceviche is there.
We serve it at weddings, baptisms, first communions and quinceañeras in extra large quantities. It’s a medley of flavors and It’s so colorful that it looks like confetti in a bowl. Always with family and always festive.
Traditionally made with seafood marinated in lime juice, this special version features jicama as a variation.
But ceviche isn’t ceviche without its tangy marinade. I like to include Clamato® Tomato Cocktail. in the mix along with lots of lime juice and some ketchup.

Description
A tangy, spicy, refreshing and delicious ceviche made with jicama, cucumber, serrano peppers, onions and tomato. The flavors come together with a Clamato citrusy marinade.
Ingredients
½ cup lime juice
½ cup red onion, sliced
1 large cucumber, about 1 ½ cups
1 large serrano pepper, chopped
1 cup roma tomatoes, chopped
1 small jicama, about 2 ½ cups, chopped
1/3 cup cilantro, chopped
½ cup ketchup
1 ½ cups Clamato® Tomato Cocktail Original
¼ teaspoon black pepper
1/2 teaspoon salt
1 large avocado, chopped lime wedges for garnish Corn tortilla chips to serve with
Instructions
Place lime juice, cucumber, serrano, tomato and jicama in a large bowl. Stir with a large spoon to mix well. Combine ketchup, Clamato, black pepper and salt in a separate bowl. Stir to mix well. Add Clamato mixture to vegetable mixture, fold in avocado. Serve with tortilla chips and garnish with lime wedges.
