Breakfast doesn’t have to be dull. Try this Baked Peach Oatmeal with Glazed Pecans

Our love of oatmeal has always been strong. It continues to evolve as time passes and we embrace it even more as creativity takes over the kitchen.

For many years, we enjoyed oatmeal just the way the package told us to enjoy it. Cooked in water, sometimes milk and sweetened with a sprinkle of sugar.

As time went by, we started adding cinnamon, piloncillo, hazelnuts, raisins. Then came the fresh fruit: bananas, cherries, apples, strawberries. All amazingly delicious. We could serve a different bowl of oatmeal every day of the week and not get tired of it.

When I discovered that oatmeal could be baked and be practically transformed into a guiltless dessert, I was completely overtaken. I baked it with chocolate, bananas and strawberry. More recently, I made oatmeal carrot bars to enjoy as a mid-day snack.

With the arrival of stone fruit season, I had to incorporate it to my baked oatmeal. I headed down to my Sprouts and chose the most beautiful yellow peaches. These were perfect for my new oatmeal.

Sprouts has the best produce at the best price. I can always find a great selection of the freshest fruits and vegetables. They had so many different peach and nectarine varieties. These yellow peaches called my name.

Ingredients for Glazed Pecans

1/4 cup brown sugar

1/8 teaspoon (pinch) salt

1/4 teaspoon ground cinnamon

1 tablespoon water

1/4 cup pecan halves

Ingredients for baked oatmeal

non-stick olive oil cooking spray

3 cups old fashioned rolled oats

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

2 cups oat milk (or any milk of your preference)

1/2 cup maple syrup

2 eggs, beaten

3 large yellow peaches, chopped; save a few slices for garnish

1/3 cup pecans, chopped

whipped cream

mint leaves


Instructions

For glazed pecans

Line a small tray with parchment paper. Set aside

Combine brown sugar, salt, cinnamon and water in a small pan.  Heat over medium heat until sugar dissolves and begins to bubble. Stir in pecans, coating evenly and cook for 3 minutes.

Remove from heat.  Spread on parchment paper-lined tray in a single layer.  Let cool. Break to separate and set aside.

For baked peach oatmeal

Preheat oven to 350° F.  Spray a 8×13 oven dish with non-stick olive oil spray.  Set aside.

Stir together oats, baking powder, cinnamon, nutmeg, ginger in a large bowl.  Add in milk, maple syrup and eggs, stir until evenly distributed.  Fold in peaches and pecans.

Pour oat mixture into prepared oven dish, spreading with spatula.  Top with glazed pecans and bake for 40-42 minutes. Let cool, serve and garnish with with whipped cream, fresh peach slices and mint leaves.
