Refresh yourself with Strawberry Mint Bolis

One of the best perks about living in California is the beautiful produce we get to take advantage of year round. One of those perfect pieces of produce is California strawberries.

Every year in the month of May, Oxnard, California holds its annual California Strawberry Festival. One of the top festivals in the nation and the unofficial kickoff to summer. The event’s proceeds benefits the Oxnard community with hundreds of arts and crafts vendors, food booths, cooking demonstrations, concerts, carnival rides and of course lots and lots of strawberry foods!

The ride to the California Strawberry Festival is quite far. It takes approximately one hour and forty five minutes to get there. Always considering the iconic California traffic, you just never know.

This year, we lucked out BIG! The kind folks at Chevy allowed us to use one of their 2019 Chevy Silverado trucks to make our ride fun and comfortable. We hopped in the Strawberry Red Silverado and had a great time, making family memories in style.

The Chevy Silverado is smooth, roomy and believe it or not, a lighter weight than other trucks. The bed is HUGE and perfect for hauling large amounts of anything! Needless to say, we were a happy bunch in our ride.

After enjoying a day-full of the sweetness of strawberries, I had to take some home. I had to take back a few flats back to family and friends and I wasn’t worried about the space. We definitely had plenty.

Because The Strawberry Festival is the unofficial start of summer, I decided to make a summer treat to enjoy during our upcoming scorching days. Bolis, also known as Otter Pops or ice pops are the perfect summer treat for kids and adults.

I grew up calling this special treat “bolis” in Mexico. I don’t call them anything else. They spark up memories of me helping my grandmother make them to sell at her little grocery store. They were very popular and always sold out.

Thank you so much Chevy for the wonderful ride, new memories made and the amazing time my family and I had this past California Strawberry Festival. It’s great way to cruise around California.

Strawberry Mint Bolis (Otter Pops)

Description

Keep cool these warm months with a refreshing strawberry mint boli (otter pop).  Sweetened with honey and made  with just a few simple ingredients.  Perfect for play dates and picnics.


Ingredients

Scale

3/4 cup raw honey

1/2 cup water

1 bunch fresh mint, rinsed

8 cups fresh strawberries, rinsed and hulled

2 tablespoons lemon juice

1/2 teaspoon vanilla extract

1/4 teaspoon peppermint extract


Instructions

Heat  honey and water in a small saucepan over medium heat.  Bring to a boil, remove from heat and stir in mint; set aside and let cool.  Run mixture through a strainer.  Discard mint. Add strawberries, lemon juice, vanilla, peppermint extract and strained honey mixture.  Blend until smooth. Divide mixture between 10 freeze pop bags (2.56″ x 10.3″); halfway, about 1 cup mixture in each.  Tie plastic bag ends in a tight knot and chill in freezer overnight.
