Mexican Chocolate Chip Skillet Cookie

Ingredients

1/2 cup (1 stick) unsalted butter, melted

1/2 cup brown sugar

1/4 cup granulated sugar

1 egg, beaten

1 teaspoon vanilla extract

1 1/4 cups all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup semi-sweet chocolate chips

1/3 cup Mexican chocolate, chopped

Serve with:

ice cream

sprinkles

Instructions

Preheat oven to 350° F.  Spray a 10-inch cast iron skillet with non-stick cooking spray.

Whisk together butter and sugars in a large mixing bowl until completely combined.

Stir in egg and vanilla extract.

Add flour,  baking soda, salt and chocolate chips and Mexican chocolate pieces.  Stir until completely combined and a dough forms.

Press dough into cast iron skillet, until the bottom is evenly covered.

Bake for 20-22 minutes or until center is cooked through.  Remove from oven.  Let cool for 10 minutes.  Serve with ice cream and sprinkles.
