Sink your teeth into this Mexican Chocolate Chip Skillet Cookie and Ralph Breaks the Internet

Our favorite muscle-bound sweet bad guy turned arcade hero is coming home this February 26 on digital and Blu-ray.

Different than the original, this sequel takes Ralph and Vanellope Von Schweetz from Litwak’s Arcade to the vastness of the internet. The duo is in search for currency to purchase a replacement steering wheel they bid on to save Vanellope’s game, Sugar Rush. They encounter many new adventures and make new friends along the way.

To celebrate the movie’s release and its Academy Award nomination for best animated movie, we are “baking” the internet with Wreck-it Ralph.

The Academy awards are tonight and we are rooting for Disney with this scrumptious Mexican Chocolate Chip Skillet Cookie right out of Sugar Rush. Perfect for Oscar watching or when you need a fun, quick and easy dessert. This cookie also makes a great birthday dessert if you’re not in the mood for cake.

Mexican Chocolate Chip Skillet Cookie

Ingredients

Scale

1/2 cup (1 stick) unsalted butter, melted

1/2 cup brown sugar

1/4 cup granulated sugar

1 egg, beaten

1 teaspoon vanilla extract

1 1/4 cups all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup semi-sweet chocolate chips

1/3 cup Mexican chocolate, chopped

Serve with:

ice cream

sprinkles


Instructions

Preheat oven to 350° F.  Spray a 10-inch cast iron skillet with non-stick cooking spray.

Whisk together butter and sugars in a large mixing bowl until completely combined.

Stir in egg and vanilla extract.

Add flour,  baking soda, salt and chocolate chips and Mexican chocolate pieces.  Stir until completely combined and a dough forms.

Press dough into cast iron skillet, until the bottom is evenly covered.

Bake for 20-22 minutes or until center is cooked through.  Remove from oven.  Let cool for 10 minutes.  Serve with ice cream and sprinkles.
