Shrubs, also known as drinking vinegars,  are a great way to keep cool during the warm days of summer.  Customarily made with seasonal fruit, sugar and vinegar, I decided to experiment with various herbs, spices and Tadin teas! The result was a refreshing spice-infused sparkling beverage.

Shrubs can also be customized to be a flavorful cocktail.  Just add a bit of rum or brandy!  Whether it’s for an impromptu refresher in your patio or a full-on cocktail party, this green tea ginger shrub will have your guests asking for more.

Green Tea Ginger Shrub

Ingredients

Scale
  • 2 cups water
  • 8 tea bags Tadin Green Tea
  • 4 tea bags Tadin Ginger Tea blend
  • 1 cup granulated sugar
  • 1 large cinnamon stick
  • 1 cup cider apple vinegar
  • Ice
  • 2 (16.9 ounce) bottles sparkling water
  • mint sprigs for garnish

Instructions

  1. Place water, tea bags, sugar and cinnamon stick in a medium saucepan over medium heat. Bring to a boil. Reduce heat. Add apple cider vinegar and bring to a boil. Decrease heat and simmer for 5 minutes. Remove from heat. Let cool and place in a tight seal glass bottle or jar.
  2. To serve: Place a few cubes of ice in a jar. Add 2-3 tablespoons shrub syrup. Add sparkling water and garnish with mint sprigs.
  3. Refrigerate any leftover shrub syrup in a tight sealed container.
