One of my favorite fruits in all the land is the pineapple. It reminds me of my trips to Hawaii, my endless love of Dole Whips, Disneyland’s Enchanted Tikki Room and piña coladas, of course. I’ve enjoyed it in a margarita, as a smoothie, in a pico de gallo, arroz con leche and yes, even in a burger. I draw the line at pizza, tho.
When I discovered that Tadin Teas has a Pineapple Tea Blend I had to try it as an iced tea. This time, I took the blend a little further and added a spicy kick of fresh jalapeños and chunks of grilled pinapple for texture and sweetness.
The process is simple and only a few ingredients are needed. It’s perfect for the blistering heat we’ve had lately and can be kid-friendly if the jalapeño slices are omitted. My son loves it!
If you are a big pineapple fan like I am, give this recipe a try. I promise it will make your summer days cooler with just one sip.
