Jackfruit Coca-Cola BBQ Chipotle Sliders

Ingredients

  • 2 tablespoons olive oil
  • 3 cloves minced garlic
  • 1 small red onion chopped, about 1 cup
  • ¼ cup honey
  • 1 cup ketchup
  • 1 can regular Coca-Cola®
  • ¼ cup apple cider vinegar
  • 1 canned chipotle chile + 3 tablespoons adobo sauce
  • 1 teaspoon dry thyme
  • 1 teaspoon black pepper
  • 2 tablespoon soy sauce
  • 1 teaspoon paprika
  • 2 cans jackfruit in water (14 oz. each), drained
  • 12 slider buns
  • 2 cups shredded red cabbage
  • pickles (optional)


Instructions

  1. Heat olive oil over medium heat. Add onions and garlic and stir until softened; about 2 minutes. Add remaining ingredients, cover, and simmer for one hour until the sauce thickens. Stir often. Remove from heat and set aside.
  2. In a separate medium pan, heat jackfruit over medium heat for 5 minutes. Stir in barbeque sauce and mix into jackfruit until evenly incorporated. Remove from heat and set aside.
  3. Toast slider buns and scoop in jackfruit mixture. Top with red cabbage and pickles if desired.
