Ingredients

- 2 tablespoons olive oil
- 3 cloves minced garlic
- 1 small red onion chopped, about 1 cup
- ¼ cup honey
- 1 cup ketchup
- 1 can regular Coca-Cola®
- ¼ cup apple cider vinegar
- 1 canned chipotle chile + 3 tablespoons adobo sauce
- 1 teaspoon dry thyme
- 1 teaspoon black pepper
- 2 tablespoon soy sauce
- 1 teaspoon paprika
- 2 cans jackfruit in water (14 oz. each), drained
- 12 slider buns
- 2 cups shredded red cabbage
- pickles (optional)
Instructions
- Heat olive oil over medium heat. Add onions and garlic and stir until softened; about 2 minutes. Add remaining ingredients, cover, and simmer for one hour until the sauce thickens. Stir often. Remove from heat and set aside.
- In a separate medium pan, heat jackfruit over medium heat for 5 minutes. Stir in barbeque sauce and mix into jackfruit until evenly incorporated. Remove from heat and set aside.
- Toast slider buns and scoop in jackfruit mixture. Top with red cabbage and pickles if desired.
