Peppermint Eggnog Cookies

The clock is ticking and still so much to do for the holidays. Besides getting ready for our traditional posadas, wrapping gifts and setting out the nativity scene, we must bake cookies for Santa too. A definite priority for my six-year-old son.

Because our time is extremely limited this month, we sought the help of Betty Crocker Cookie Mix. To make our cookie baking extra special, we selected their Limited Edition Eggnog cookie flavor and searched for fun ideas in the Betty Crocker Kid’s Christmas Cookie Corner site. This batch of cookies had to be extraordinary.

Peppermint Eggnog Cookies

With just a few white chocolate chips and crushed candy canes, our eggnog cookies burst with Christmas glee. It simply cannot get any more cheerful and Christmas than eggnog and candy canes.

Peppermint Eggnog Cookies
Makes 24

Ingredients
1 (17.5 ounce) package Betty Crocker Limited Edition Eggnog Cookie Mix
1 stick unsalted butter
1 egg
1/2 cup melting white chocolate
4 candy canes, crushed

Method
Bake cookies according to package instructions. Remove from oven and let cookies cool for 10 minutes.

Melt chocolate in a water bath. Dip each cookie half way into the chocolate and immediately sprinkle with crushed candy canes. Place in cooling rack until chocolate sets.
