- 1 1/4 cup old fashioned oats
- 4 tablespoons sweetened shredded coconut
- 1/2 cup finely chopped almonds
- 1/2 cup whey protein powder
- 1/2 cup honey
- 1/2 cups dried apricots, finely chopped
- 1/2 cup Jif Cashew Butter
- 1 tablespoon cinnamon powder
Instructions
- In a large bowl, combine oats, 2 tablespoons shredded coconut, almonds, protein powder, honey, dried apricots and cashew butter. Mix with a large wooden spoon.
- Roll approximately 20-24 balls. Place 2 tablespoons shredded coconut in a small plate. Roll each ball in shredded coconut covering the surface. Place on a serving plate, sprinkle with cinnamon and refrigerate for 1 hour.
- Leftover bites can stored in an airtight container and refrigerated can last up to 4 days.
