Cashew Power Bites

As part of our new back to school routine, I must pack three snacks for my son to enjoy throughout his busy day.  Usually, his snack package includes  fresh fruit, such as grapes, a banana or one or two clementines, some string cheese or yogurt and a nut butter treat.  Because I’m not there to make sure he eats his lunch, I have to pack treats that he loves to eat.

Lately, we’ve been on a cashew nut butter kick.  To keep him interested in eating his snacks, I try to be as creative as I can.  Jif has a delicious and creamy cashew nut that we have been incorporating in our day.  Our favorite way to enjoy it is in these cashew power bites.

Cashew Power Bites

The cashew butter in these bites serve as a blank canvas and can be customized to your liking with you favorite ingredients. We prefer honey, coconut, oats, dried apricots, almonds and a sprinkle of whey protein powder.  The easy to mold cashew butter spread blends pretty easily and quickly.  This treat can be prepared in less than 15 minutes.

This recipe goes along way and can easily be turned into a dessert  appetizer rather than a mid day snack.  To save time during the week, I like to prepare a large batch on Sunday for the entire family to enjoy through out the week.  They are great for road trips, fit snuggly in a lunch box and store great in the refrigerator for 5 days.

Ingredients

Scale
  • 1 1/4 cup old fashioned oats
  • 4 tablespoons sweetened shredded coconut
  • 1/2 cup finely chopped almonds
  • 1/2 cup whey protein powder
  • 1/2 cup honey
  • 1/2 cups dried apricots, finely chopped
  • 1/2 cup Jif Cashew Butter
  • 1 tablespoon cinnamon powder


Instructions

  1. In a large bowl, combine oats, 2 tablespoons shredded coconut, almonds, protein powder, honey, dried apricots and cashew butter. Mix with a large wooden spoon.
  2. Roll approximately 20-24 balls. Place 2 tablespoons shredded coconut in a small plate. Roll each ball in shredded coconut covering the surface. Place on a serving plate, sprinkle with cinnamon and refrigerate for 1 hour.
  3. Leftover bites can stored in an airtight container and refrigerated can last up to 4 days.
