I refuse to let go of summer! Although living in Southern California has its perks, we are spoiled with the surreal weather we experience year-round. It’s back to school time and it’s difficult to adjust to another morning routine while the sun is shinning a comfortable 72 degrees and slowly warms up and burns off the marine layer near by. We are having way too much fun and time is just passing us by.
Autumn on the other hand, is marvelous and is my favorite season of the year. We look forward to our favorite holidays, Halloween and Dia de Muertos in October and November. We also celebrate my son’s birthday and our wedding anniversary. The brisk autumn breeze doesn’t start until the end of October where I live, and feels like we are experiencing mid-summer early on in the fall sometimes.
With our favorite holidays, come our favorite produce of the season. One of those is the versatile sweetpotato. A root vegetable that is the epitome of Thanksgiving and family celebration around the dinner table. Rich in vitamin A, calcium and fiber, sweet potatoes can be incorporated in many sweet or savory dishes.
Because we refuse to let go of summer, I figured that a transition recipe is in order. The weather and our palates still crave cool and refreshing warm-weather treats such as ice cream, but our routines and calendars are making us switch gears to the anticipated produce that will grace our tables this fall. Sweetpotatoes!
Sweetpotatoes are sure to make an appearance as a dessert entree. It’s usually en almibar, in cinnamon-piloncillo syrup baked to perfection. Sometimes garnished with sweetened coconut or pecans.
Taking that idea, I went in the complete opposite direction and turned it into ice cream with coconut milk and sweetened it with piloncillo. This decadence is vegan, delicious and a great way to hold on to our summer for just a little bit longer.
Ingredients
- 3 medium sweet potatoes, scrubbed and rinsed
- 2 1/2 cups water
- 4 ounces piloncillo
- 2 4-inch cinnamon sticks
- 2 cups coconut milk
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1/3 cup water
- 1/4 cup honey
- 1 cup pecans, roughly chopped
- 1 teaspoon cinnamon powder
- 1/8 teaspoon nutmeg
Instructions
- Preheat oven 400° F.
- Pierce holes all over sweet potatoes with fork.
- Place sweet potatoes on baking sheet and bake for 50 minutes. Let cool and peel.
- In a medium saucepan, heat water, piloncillo and cinnamon sticks over medium heat. Simmer until piloncillo melts completely. Remove from heat.
- Place peeled sweet potatoes in cinnamon/piloncillo liquid and mash until completely incorporated.
- Transfer mixture to blender container and add coconut milk, vanilla extract, salt and nutmeg.
- Blend until mixture completely liquifies.
- Pour mixture in a 9-inch x 13-inch metal or glass dish, cover with plastic wrap and freeze for 6 hours.
- Serve and sprinkle with honey-cinnamon pecans.
- In a medium saucepan, combine water and honey over medium-low heat until the first simmer.
- Remove from heat and immediately fold in pecans, stirring until they are completely covered by the syrup.
- Transfer to a parchment paper lined plate and spread them out. Sprinkle with cinnamon and let set for 30 minutes.

Me niego a que el verano se termine! Aunque viviendo en el sur de California tiene sus ventajas, estamos mimados con la experiencia surrealista del clima durante todo el año. Es tiempo de regresar a la escuela y es difícil adaptarse a otra rutina matutina. Los rayos del sol están a 72 grados y lentamente hacen desaparecer la capa marina que tenemos cerca, nos estamos divirtiendo demasiado y el tiempo pasa muy rápido.
El otoño, es maravilloso y es mi estación favorita del año. Anticipamos nuestros días de fiestas favoritos, Halloween y Día de Muertos en octubre y noviembre. También celebramos el cumpleaños de mi hijo y nuestro aniversario de boda. La brisa fría del otoño a paso ligero no se inicia hasta finales de octubre donde yo vivo, y las temperaturas de verano se nos extiende un poquito mas hasta ese tiempo.
Con nuestros días festivos favoritos, también viene la estación de nuestras frutas y verduras favoritas. Uno de ellos es la versátil batata o camote como le digo yo. Una raíz vegetal que es el epítome de la acción de gracias y la celebración en familia alrededor de la mesa. Rico en vitamina A, calcio y fibra, las batatas se pueden incorporar en muchos platillos dulces o salados.
Porque nos negamos dejar que el verano pase, me di cuenta de que una receta de transición está en orden. El tiempo y nuestros paladares aún anhelan las invitaciones frescas y refrescantes de clima cálido, como los helados. Pero nuestras rutinas y agendas están haciendo con nosotros cambiar la marcha y anticipar las verduras que adornarán nuestras mesas este otoño como la batata!
La batata se destacara por seguro como un platillo dulce en nuestra mesa este año. Por lo general es en almíbar de canela y piloncillo horneados a la perfección. A veces adornado con coco o nueces endulzadas.
Tomando esa idea, me fui en la dirección opuesta completa y lo convertí en helado con leche de coco y endulzado con piloncillo. Esta decadencia es vegetariana, deliciosa y una gran manera de mantener a nuestro verano por sólo un poco más de tiempo.
Helado de Batata con Nueces Endulzadas
Rinde 6 personas
Ingredientes
3 batatas (o camotes) medianos, enjuagados
2 1/2 tazas de agua
4 onzas de piloncillo
2 palitos de canela de 4 pulgadas
2 tazas de leche de coco
1/2 cucharadita de extracto de vainilla
1/8 cucharadita de sal
Para las nueces endulzadas (opcional)
1/3 taza de agua
1/4 taza de miel de abeja
1 taza de nueces, picadas en trozos grandes
1 cucharadita de canela en polvo
1/8 cucharadita de nuez moscada
Instrucciones
Precalienta el horno a 400 ° F.
Pique las batatas varias veces con un tenedor.
Coloque las batatas en una bandeja para hornear y hornee durante 50 minutos. Deje enfriar y pele.
En una olla mediana, calienta el agua, piloncillo y palitos de canela a fuego medio. Cocina a fuego lento hasta que se derrita por completo el piloncillo. Retire del fuego.
Coloca las batatas peladas en liquido de canela y piloncillo y has puré hasta que esté completamente incorporado.
Transfiere la mezcla a la licuadora y añade la leche de coco, extracto de vainilla, la sal y la nuez moscada.
Licua hasta que la mezcla se licua completamente.
Vierte la mezcla en un recipiente para hornear de metal o vidrio de 9 pulgadas x 13 pulgadas, cubre con papel plástico y congela durante 6 horas.
Sirve y espolvorea con las nueces endulzadas con canela.
Instrucciones par las Nueces Endulzadas con Canela
En una cacerola mediana, combina el agua y la miel a fuego medio-bajo hasta que de el primer hervor.
Retira del fuego y agrega inmediatamente las nueces, revolviendo hasta que estén completamente cubiertas por el almíbar.
Colócalas en un plato cubierto de papel de pergamino y extiéndelas. Espolvorea con canela y deja enfriar durante 30 minutos.
