Tri Tip Roast with Steamed Veggies: My F&Easy Dinner for Two
After my son was born, it’s rare my husband and I get to spend a nice, quiet meal together. It’s always about cleaning up spilled juice, telling our four-year-old to sit up correctly and play airplane with a forkful of food. Not to mention rushing through a meal because bath time will overlap with storybook time and storybook time will overlap with bedtime. It was time to revisit those good old days when I used to spend countless hours in the kitchen, cooking a plump juicy roast, meticulously grilling vegetables and concocting a scrumptious dessert for two.
One little problem… I have no time. No time to marinate or dry rub the roast, no time to grill, no time to bake or freeze a yummy dessert. Lately, all our family meals have been frozen ahead of time on the weekends or something quick and easy. Between work, school, housework, and the hustle and bustle of our daily routine.
On my recent weekly grocery shopping trip to Fresh & Easy I saw the light! The refrigerator light that is, and it lit up a fresh&easy Santa Maria Tri Tip Roast. It was already seasoned, it was boneless and only takes 50 minutes to cook in the oven. I’ll take it! I had been passing by their prepared food refrigerators for months now and not until now did it occur to me that in times like these, in times when we have no time, high quality already prepared food can work great for impromptu dinner dates or informal parties.
I had the main dish ready and now it was time to dress it up! I selected fresh&easy steamed petite carrots and green beans with honey butter and parsley because their preparation time took 6 minutes and the portion was perfectly sized for two. All it needed was a sprinkle of cooked corn kernels and dinner was ready! Fresh & Easy has a great selection of beer and wine so I picked up a bottle of pinot as well. For dessert, one of our favorite frozen treats, Ciao Bella Blackberry Cabernet Sorbet. The menu was set! What more could I as for? It took me an hour and 20 minutes to prepare an intimate meal for two. With Fresh & Easy as my one stop dinner date stop, I guarantee you these will be occurring more often.
