Café con Leche Bread Pudding
Bread puddings are the perfect holiday desserts. They are quick, easy and made with ingredients available in your pantry. My last-minute contribution to any pot luck, holiday dinner or party dish is always this cafe con leche bread pudding. It’s perfect at any time of the year and makes a great brunch treat.
This recipe was developed by accident a few years ago. Rushing throughout the kitchen as always, I had prepared my recipe for basic bread pudding. It was ready to go into the oven when all of a sudden, I spilled my freshly brewed cup of coffee into the prepped dish. Argh! I had no time to prepare a fresh one, so I figured it wouldn’t hurt to place it in the oven. Something good might turn out from this.
At about the 30 minute mark my kitchen began to smell heavenly. The aroma of sweet coffee permeated the air. I was sold just by the smell alone. I couldn’t wait to try my new creation.

Café con Leche Bread Pudding
Serves 8-10
Ingredients
8 cups French bread or bolillo, cut in cubes
3 eggs
3 cups milk
1 cup brewed coffee
1 1/2 cups sugar
6 tablespoons melted butter, melted
2 teaspoons vanilla extract
1 teaspoon cinnamon powder
1/2 cup raisins
1/2 cup cranberries
1 cup chopped pecans
Instructions
Preheat oven to 350° F. Place cubed bread in 9″x 13″ baking dish. Set aside.
In a large bowl gently whisk the eggs with milk, sugar, butter, vanilla and cinnamon. Pour mixture over cubed bread. Add raisins, cranberries and pecans and carefully mix with hands. Pour cup of coffee evenly over bread and milk mixture. Bake at for 1 hour and 15 minutes until the top is golden brown.

Es mi contribución de último minuto a cualquier pot luck, cena del día de fiesta o un platillo para cualquier fiesta siempre cuento con este budín de café con leche. Es perfecto en cualquier época del año y el postre adecuado para un almuerzo entre amigos.
Esta receta fue desarrollada por accidente hace unos años. Apurada por toda la cocina, como siempre, había preparado mi receta de budín de pan básico. Estaba listo para hornear cuando, de repente, se me derramo mi taza de café recién hecho en el molde ya listo para el horno. Argh! Budín de Café con Leche
Rinde 8-10 porciones
Ingredientes
8 tazas de bolillo, cortado en cubitos
3 huevos
3 tazas de leche
1 1/2 tazas de azúcar
6 cucharadas de mantequilla derretida
2 cucharaditas de extracto de vainilla
1 cucharadita de canela en polvo
1/ taza taza de pasas
1/2 taza de arándanos secos
1 taza de nueces picadas
1 taza de café preparado
Instrucciones
Precalienta el horno a 350 ° F. Coloca los cubitos de pan en un recipiente para hornear de vidrio de 9 “x 13”. Pon a un lado.
En un tazón grande mezcla suavemente los huevos con la leche, el azúcar, la mantequilla, la vainilla y la canela. Vierte la mezcla sobre el pan en cubos.
