Bionico

Now that my son is older and is open to tasting new foods, I can explain and venture out with him in search for authentic Mexican flavors and ingredients. The same flavors and ingredients I grew up with.
One of those flavors I am “sweetly” fond of is La Lechera. From Easter lemon pie to birthday ambrosia salad, my mother always had La Lechera present in those special moments.
My fondest memories with La Lechera was as an afterschool snack. My mom would drizzle the sweetness from one of those cute La Lecherita cans on a slice of toast. It was one of the best treats a child could ever ask for, and a memorable one. I want my son to remember those special moments with ingredients that define our culture and childhood.
Another of my favorite traditional snacks when growing up was a bionico. A bionico or “a bionic” in English, is a common energy snack enjoyed in between meals. Many people with physical enduring days add granola and popped amaranth for a source of protein and added energy. It’s a better-for-you treat. Way better than the store bought granola or protein bar because it has all the benefits of fresh fruit and dairy.
The bionico has slowly evolved into a snack/dessert. The authentic treat calls for a special sweet sauce made with yogurt or sour cream, instant coffee granules, evaporated milk and La Lechera.
In light of the New Year and keeping resolutions on making better food choices and educating my son on his Mexican roots, I decided to teach my son how to create a bionico bar for all our friends and family to enjoy. He’s taken an interest in cooking lately and that couldn’t make me happier that he wants to know how food is prepared and exactly how the dish on the table came to be. This was the perfect opportunity to spend time with him and arrange this colorful spread.
The bionico can include your favorite fruit. The sauce that drenches the fruit is what makes a bionico a bionico and not a parfait. A bionico bar is a very practical idea for get-togethers and parties because your guests can serve themselves. It also sparks many childhood memories for those that are familiar with this beloved Mexican street food snack. With a bionico bar, you customize your treat by including a large variety of fruit and toppings.
The concept of a bionico bar is similar to a do-it-yourself dessert bar. It’s new and a great way to introduce your guests to one of the best Mexican street foods while at the same time keeping the snack/dessert guilt-free and better for you.
