- 1 (9 ounce) package chorizo (beef, pork or soy)
- 1/2 pound yellow potatoes, boiled, peeled and cubed
- ½ teaspoon salt
- 2 (10 ounce) packages Real California Oaxaca Style Cheese, shredded
- 12 fajita size flour tortillas, warmed
- 1 cup Real California Crema con Sal
- 1 large jalapeño, sliced
- 1 Roma tomato, chopped
Instructions
- Preheat oven to 350° F.
- Cook chorizo in a large oven-safe skillet over medium-high heat; about 8 minutes, stirring frequently. Add potatoes, season with salt and continue cooking for 5 minutes, stirring frequently.
- Transfer half the potatoes and chorizo mixture to a separate bowl. Spread the remaining mixture into an even layer in skillet. Sprinkle half the cheese evenly, add reserved potatoes and chorizo mixture and top with remaining cheese. Bake for 15 minutes at 350° F or until cheese is bubbly.
- Serve in flour tortillas with Real California Crema con Sal, jalapeño slices and tomatoes.
