Watercress, Pineapple and Coconut Paletas
Ingredients
1 pineapple, peeled, cored and roughly chopped
1 cup coconut milk
½ cup water
2 teaspoons lime juice
3 tablespoons honey
1 ripe banana
¼ teaspoon salt
1 (2 ounce) bunch B&W Watercress
Instructions
Combine all ingredients in a blender. Blend until smooth. Pour mixture in popsicle mold, cover and insert popsicle sticks. Freeze for 4 hours or until set. Demold popsicles and enjoy immediately.
