Description
Gazpacho Moreliano is a seasonal fruit treat. It may include mango, pineapple, watermelon and jicama. Stirred together with citrus juice, it resembles a fruit salad but with an added zest of onion, a kick of spice, and salty cheese!
Ingredients
¾ cup jicama, chopped
¾ cup pineapple, chopped
¾ cup mango, chopped
¾ cup watermelon, chopped
1 large cucumber, seeds removed and chopped
½ cup white onion, finely chopped
½ cup orange juice
1 large lime, juiced
1 ½ cups cotija cheese, finely crumbled, divided
¾ cup El Yucateco Habanero & Chiltepin Hot Sauce, divided
Instructions
Toss together jicama, pineapple, mango, watermelon, cucumber, onion, orange juice and lime juice in a large bowl.
Add ¾ cup fruit mixture to a tall glass. Top with 2 tablespoons cotija cheese and a drizzle of hot sauce. Repeat a fruit layer, followed by another cotija cheese layer and top it off with more hot sauce. Repeat with remaining fruit and cheese. Serve.
