Ingredients
Ingredients for Salsa:
¼ piece onion
4 garlic cloves
4 large tomatillos, quartered
¾ cup cilantro sprigs
1 avocado
1 (4 ounce) can Ortega Diced Jalapeños
1 (4 ounce) can Ortega Mild Fire Roasted Diced Green Chiles
1 tablespoon lime juice
1 tablespoon apple cider vinegar
½ teaspoon sea salt
¼ teaspoon black pepper
Ingredients for shrimp:
2 pounds medium shrimp (peeled, tails off)
2 tablespoons Ortega Taco Seasoning Mix
1 teaspoon garlic salt
1 teaspoon black pepper
3 tablespoons cooking oil
16 street style corn tortillas, warmed
Toppings:
Shredded lettuce
Cilantro sprigs
Red onion, sliced
Red jalapeño, finely chopped
Lime wedges for juicing
Instructions
Directions for salsa:
Place all ingredients in blender and blend until smooth. Transfer to a salsa bowl.
Directions for shrimp:
Place shrimp in a large bowl. Season with Ortega Taco Seasoning Mix, garlic salt and pepper. Toss until evenly seasoned.
Heat oil in a large skillet over medium heat. Add shrimp and cook for 6 minutes, stirring frequently, until shrimp are cooked through. Remove from heat.
To serve: place 2-3 warm tortillas on a serving plate, add 4-5 shrimp, top with lettuce, onion, salsa, cilantro, red jalapeño and a sprinkle of lime juice.
