Soft, fluffy and cake-like, this Christmas Cortadillo is perfect for the holiday season.

Cortadillo is one of the most popular pan dulces in Mexican bakeries. Also known as kids cake (pan de niños) , this cake-like pastry is traditionally decorated with pink or white frosting and topped with colorful nonpareils. It’s a fun dessert that can be enjoyed with a glass of milk or coffee.

Its name means “sliced,” and derives from how this tasty sweet is sold at bakeries. Because it’s baked like a sheet cake, it is then sliced and sold by the piece. Now you can make it at home. For my version, I added pecan extract and gave it a Christmas twist with holiday nonpareils.
