Coricos are cookies very popular in the Mexican states of Baja California, Sonora and Sinaloa. Made with corn flour and their distinct doughnut shape sets them apart from other cookies. They are crispy, not overly sweet in taste which makes them the ideal breakfast cookie to enjoy with a cup of coffee or milk.

This coricos variation includes cinnamon and orange zest, but if you want to keep them traditional, simply omit those ingredients.

Coricos are also known as tacuarines. The name tacuarines comes from the name Tacuarinero, a pseudonym of the Southern Pacific Railroad. For some time, it was common for women to board the train and sell these cookies to hungry passengers.
