Lime Sorbet Garrafa Style

Description

Summer is near and what better way to keep cool than with a lime sorbet garrafa style. “Garrafa style” is one of the most common ways to prepare this frozen treat. Its preparation is very basic because of the type of equipment used: a wooden bucket, a smaller steel bucket and large spoon to stir. With no preservatives, just fruit juice, water and sugar, it makes it a better for you alternative than store bought.


Ingredients

Scale
  • 4 cups water
  • 2 cups granulated sugar
  • 1 cup lime juice
  • 1 tablespoon lime zest plus more for garnish

Instructions

  1. Combine water, sugar and lime juice in a medium saucepan.  Bring to a boil.  Reduce heat to medium low and simmer for 10 minutes.  Liquid with thicken bit into a syrup consistency. Remove from heat, stir in lemon zest and set aside to cool.
  2. Pour syrup into a 9”x5”3” loaf pan, cover with plastic wrap and chill for 3 hours. Remove from freezer, scrape frozen syrup with a fork thoroughly. Place back into the freezer and chill overnight. Scoop, serve and sprinkle with more lime zest if desired.  Enjoy.
