Roasted Cauliflower with Cotija

Roasted Cauliflower Steaks with Cotija

I love roasting cauliflower because I can include it in many dishes. From adding it to a rice bowl to chopping it up and including it to scrambled eggs, it’s a great vegetable to have readily available for meal prepping and impromptu meals where a vegetable is needed.

For this recipe, I decided to make a delicious marinade with pantry staples and brush it evenly on cauliflower steaks. The mixture of Mazola Corn Oil with garlic and spices gave it a flavorful feel. By finishing it off with fresh parsley and crumbled cotija cheese, the dish came together beautifully. I made plenty to store and serve later on in the week. It keeps well and so filling.

Roasted Cauliflower Steaks with Cotija

Serves 8

Ingredients:

1/4 cup Mazola® Corn Oil, divided

5 garlic cloves, minced

1 1/2 teaspoon dried oregano, crushed

1/2 teaspoon dried rosemary

1/2 teaspoon dried thyme

2 heads cauliflower, cut in 1/2-inch slices

Garlic salt to taste

Black pepper to taste

1/3 cup cotija cheese, crumbled

1/3 cup fresh parsley, chopped

Lime wedges for serving

 

Directions:

Preheat oven to 400° F. Lightly brush a large baking sheet with 1 teaspoon Mazola® Corn Oil​.

Combine oil, garlic, oregano, rosemary, and thyme in a small bowl. Whisk until mixed well.

Brush cauliflower slices with oil mixture on both sides. Arrange in a single layer on the baking sheet and season with salt and pepper.

Roast in oven for 25 minutes, flipping to other side at the halfway mark.

Remove from oven, immediately sprinkle with cotjija cheese, parsley and lime juice. Serve and enjoy.
