Description

If you like the rice-based Mexican horchata agua fresca, then you are going to love this refreshing coconut version of the classic.  Made with a hint of coconut, the flavor is tropical, creamy and a great pairing to your favorite spicy tacos.


Ingredients

Scale
  • 1/2 cup long grain rice
  • 3/4 cup unsweetened shredded coconut
  • 1 4-inch cinnamon stick
  • 8 cups water, divided
  • 1 teaspoon vanilla extract
  • 3/4 cup granulated sugar


Instructions

  1. Place rice, coconut, cinnamon stick and 2 cups water in blender container.  Blend until smooth. 
  2. Add 2 more cups water and blend again for 45 seconds. Set aside and let mixture rest for 10 minutes in blender container. 
  3. Stir and pour mixture into a large pitcher through a mesh strainer.
  4. Stir in vanilla, sugar and remaining water to pitcher and stir.
  5. Serve over ice and enjoy.
