Refresh yourself with a tall glass of Coconut Horchata
What is your favorite aguas fresca? It’s so hard for me to decide, but I can tell you that horchata is definitely one of my top three.
The classic is perfect but sometimes I like to add a flavor twist the already sweet starchy taste we all love. Coconut flavor is just right. It doesn’t take much. Just some unsweetened coconut flakes will do. No need to spend time and energy cracking open a coconut.

Coconut Horchata

Description
If you like the rice-based Mexican horchata agua fresca, then you are going to love this refreshing coconut version of the classic. Made with a hint of coconut, the flavor is tropical, creamy and a great pairing to your favorite spicy tacos.
Ingredients
- 1/2 cup long grain rice
- 3/4 cup unsweetened shredded coconut
- 1 4-inch cinnamon stick
- 8 cups water, divided
- 1 teaspoon vanilla extract
- 3/4 cup granulated sugar
Instructions
- Place rice, coconut, cinnamon stick and 2 cups water in blender container. Blend until smooth.
- Add 2 more cups water and blend again for 45 seconds. Set aside and let mixture rest for 10 minutes in blender container.
- Stir and pour mixture into a large pitcher through a mesh strainer.
- Stir in vanilla, sugar and remaining water to pitcher and stir.
- Serve over ice and enjoy.
