I am so excited to share this recipe with you. Sweater weather is here, and this is the perfect treat to enjoy this fall.  Now, this is not your typical arroz con leche. It has a couple of extra special ingredients that take this classic Mexican dessert from a traditional recipe to a Thanksgiving feast dessert. 

The first special ingredient is pure pumpkin. This gives it the fall vibes and flavor everyone craves this time of the year. The second special ingredient is Land O Lakes® Butter with Canola Oil, added once the rice is cooked. It gives this recipe a delicious thick and creamy, buttery taste. You will immediately see the mixture fluff as soon as it is swirled in.

Description

Creamy, smooth and buttery arroz con leche with the taste of pumkin.  Perfect for the cool autumn weather.


Ingredients

Scale

6 cups water, divided

1 cup uncooked white rice

1 large cinnamon stick

12 whole cloves

2 star anise

1 teaspoon salt

1 (12-ounce) can evaporated milk

2/3 cup sugar

1 (15-ounce) can pure pumpkin

½ cup raisins

2 tablespoons Land O Lakes® Butter with Canola Oil

Ground cinnamon for garnish


Instructions

Combine 2 cups water, rice, cinnamon stick, cloves and star anise in a sauté pan. Soak for at least 1 hour. 

 

Once finished soaking, place pan over medium heat; add remaining water and salt. Bring to a boil for 3 minutes then remove spices with tongs and discard.

 

Add evaporated milk, sugar, pumpkin and raisins. Stir until pumpkin mixes in completely. Reduce heat to medium-low and cook for 20 minutes, stirring every 5-7 minutes. Stir in Land O Lakes® Butter with Canola Oil. Remove from heat, cool for 15 minutes and serve. Sprinkle with ground cinnamon for garnish.
