Chocolate Amaranth Calaveritas
I have been wanting to make chocolate amaranth calaveritas for quite some time now. I wanted them to be bite-size and had been searching for the perfect mold. Well, I finally found it! Aren’t these the cutest chocolate amaranth calaveritas you’ve ever seen?
Have a Sweet Dia de Muertos with these Chocolate Amaranth Calaveritas
The process is simple. You don’t need a stove or an oven. You can easily prepare these by melting chocolate in the microwave for a few seconds. The amaranth must be puffed. Save yourself sometime and purchase it already puffed. I tried to puff large amounts of amaranth and it was very challenging. If you can’t find it at your grocery store, I’ve linked the product I used down below. It will save yourself a headache.

Once the skulls have set in the mold, I used a very fine decorating tip (Wilton #1), popped them in the refrigerator and the white chocolate and candy melts set in just a few minutes. This is the perfect activity to do with your family now that we are home for the Dia de Muertos and Halloween holidays.

Description
These chocolate amaranth calaveritas are fun and easy to prepare. Makes a great family activity for Dia de Muertos.
Ingredients
3/4 cup high quality semi-sweet chocolate chips
2 1/2 cups puffed amaranth
1/4 cup white chocolate morsels
candy melts of your color choice (1/4 cup each)
Instructions
Spray skulls mold with non-stick cooking spray.
Place chocolate chips in a microwave safe cup. Melt in microwave on high for 30 seconds. Stir.
Combine amaranth and melted chocolate in a large bowl. Stir to distribute the chocolate thoroughly.
Fill molds with amaranth/chocolate mixture. Press to mixture to fill in mold indentations. Place mold in refrigerator to set for 2 hours.
Carefully unmold chocolate amaranth skulls by sliding a small knife along the edges of each skull mold. Place skulls on a tray and return to refrigerator while melting white chocolate morsels and candy melts.
Melt white chocolate morsels in a small microwave safe bowl for 30 seconds. Stir.
Place piping bag fitted with a #1 fine tip or ziploc bag (with tip cut off after filling) in a cup to fill with melted white chocolate. Spoon in melted white chocolate and let cool slightly before piping on chocolate amaranth skulls.
Decorate by drawing squiggly lines as teeth, eyebrows and tears on each skull. Return to refrigerator to set while melting candy melts.
Repeat melting process with candy melts. Scoop piping bags or zip loc bags wit tips cut off (after filling). Decorate by filling in eyes and creating colorful designs on chocolate amaranth skulls foreheads. Return to refrigerator and let set for 15 minutes. Enjoy!
