I’m excited because there is a bit of a chill in the air now.  Cozy sweaters,  dry leaves on the ground, and warm drinks are starting to slowly peek into my everyday life.  

Atoles will soon be simmering on the stove, a common sight during the winter months in my kitchen. Atole is a thick and comforting milk-based drink flavored with fruit or nuts (or both!).  A drink that brings back so many memories of me as a new, exhausted mother, trying to figure out how in the world a newborn baby works.   Thank goodness my mother was there to  help me figure that out and answer all my questions.  All while enjoying a cup of steaming atole at the kitchen table.   It’s a beverage that holds a special place in my heart.

Fast forward eleven years later and I think I’ve done a pretty good job at being the mother of a beautiful boy. I’ve also done a pretty good job developing my share of atole recipes.  Strawberry atole, in particular, is one of my favorites.  It’s a transitional drink with the flavor of summer strawberries with a warm, cozy fall feel. 

Different than a champurrado, a masa-based chocolate drink, atoles are thickened with corn starch. I love using Argo Corn Starch because it ensures smooth atoles, clear sauces, lump-free gravies, and reliable thickening – in fact, it has twice the thickening power of flour.  It dissolves easily and it’s flavorless so it never alters the taste of the recipe. The delicious fruit and nut flavor comes through without any starchy taste.

Strawberry Atole

Description

A thick, comforting warm drink flavored with fresh strawberries. Perfect for cold fall and witer days. A must for the holidays.


Ingredients

Scale

2 tablespoons Argo Corn Starch

¾ cup water, divided

2 ¾ cups strawberries, hulled and quartered

½ cup granulated sugar
3 cups milk


Instructions

Combine Argo Corn Starch and ¼ cup water in a small bowl.  Stir to dissolve; set aside.

 

Combine strawberries, sugar, remaining ½ cup water in a 5-quart pot over medium heat.  Bring to a boil, reduce heat and continue cooking for 10 minutes, stirring every 2 minutes.

 

Add milk to strawberry mixture.  Using an immersion blender, blend until smooth (or transfer to a blender, blend and return to pot).

 

Add corn starch mixture to pot; bring to a boil, continue cooking for 15 minutes, stirring frequently. Serve hot.
